Make your Easter a little more delicious by baking these inspired cupcakes. Cupcakes are for all kids… including the kid at heart.
Here we have some cupcakes for the whole family. It doesn’t matter if you prefer chocolate or vanilla… there’s something for everyone!
Snowball Cupcakes
Don’t let the name fool you… these delectable goodies are perfect for your Easter Egg Hunt.
Ingredients
1 box of chocolate cake mix
2 cups sweetened flaked coconut, divided
Gel paste icing colors in pretty pastels
2 ¼ cups granulated sugar, divided
1 cup light corn syrup
½ cup water
6 egg whites
1 tablespoon vanilla extract
Directions
1. Follow the box’s directions and bake and cool the cupcakes in a 12 count cupcake pan
2. Divide the coconut into four equal portions, but set aside one to remain white. Place the gel paste icing and coconut into three separate Ziploc bags and shake!
3. Place 1 ¾ cup sugar in a medium pot, along with the corn syrup and water. Bring the syrup to a boil on medium. Use a thermometer and allow the syrup to reach 240 degrees. (An adult needs to complete this part of the recipe!)
4. Whip the egg whites with the remaining ½ cup of sugar until they are glossy and stiff.
5. When the syrup reaches 240 degrees, carefully pour it into a heat safe vessel. Then, slowly add syrup to egg whites while using a mixer at a low speed. Whip until stiff.
6. Use an ice cream scooper to top each cupcake with the whipped frosting and immediately dab into coconut.
7. Enjoy!

Butterfly Cupcakes
These are adorable cupcakes you can make on the fly (pun intended!) with your child!
Ingredients
1 box of chocolate or vanilla cake mix
Green icing
One bag of Pastel M&M’s
24 Yogurt pretzels
Directions
1. Bake cupcakes according to instructions on cake mix box.
2. Let cupcakes cool.
3. Spread green icing on each cupcake.
4. Place three M&M’s in middle of cupcake, place a pretzel on either side.
5. Enjoy!

Easter Nest Cupcakes
If you love chocolate, then these are the cupcakes for you! All chocolate everything. (Except for the Easter eggs…. I mean, jelly beans!)
Ingredients
1 box of chocolate cake mix
Chocolate buttercream icing
1 cup Crumbled, flaky chocolate bars
One bag of colorful jelly beans
Directions
1. Bake cupcakes according to instructions on cake mix box.
2. Let cupcakes cool.
3. Spread chocolate buttercream icing on cupcakes.
4. Place chocolate flakes on cupcake icing.
5. Top with jelly beans.
6. Enjoy!
