Inspired by Janet Gibson’s compilation of some of her favorite local restaurant dishes for the October issue of CityView, Lynnie Guzman came up with a list of her own.
“I scrolled through my Instagram to see what food photos made me wish I was eating them right now, and I honestly could not pick just one,” she wrote in an email. “I need a Vegetable Makhani from Fayetteville Pie Company; it has been far too long! Who doesn't love a heaping plate of chicken nachos while sitting outside at Blue Moon Cafe?
“The Italian lesson (pepperoni is not Italian) while noshing a fresh-out-of-the-brick-oven Horny Goat Pizza at Gusto Napoletano and a soul-warming bowl of pho from Saigon Bistro all rank high on this foodie’s list!”
Her list made us hungry and also sent us to Fayetteville Pie Company’s Facebook page to try to find out exactly what in the world goes into a Vegetable Makhani. Actually, we love any excuse to scroll the Fayetteville Pie Company sweet and savory offerings, which currently include the likes of Chicken Enchilada Pie as well as a butterscotch pumpkin pie and a chocolate mousse pie with a black cat sugar cookie on top.
But the Makhani, offered in warm weather, features roasted cauliflower, carrots, potatoes, chickpeas and onions “simmered in coconut milk and a combination of cumin, cinnamon coriander and turmeric. Garnished with caramelized mango chutney, fresh cilantro and a drizzle of cucumber yogurt raita.”
